Recipe: Healthy Summer Pasta Salad

As someone who tries to live a healthy life and cope with Fibromyalgia, I'm careful about what I eat and make sure it's healthy and not super processed--like a lot of the food in our diets are. Since I do have this disease, I don't like spending a lot of time cooking. Being on my feet on the wood floor too long or chopping up too many things tends to hurt my body so I like to cook things that are fast but still delicious! This recipe I threw together for dinner a few nights ago and liked it so much I made it again for lunch, and decided to share it with you! It's really easy and doesn't take much time at all!

Ingredients:
-4 cups Pasta (I chose Organic Farfalle but any type will do)
-2-3 cups Cucumber, sliced
-6 oz. Can diced tomatoes, rinsed
-2 cups onion, diced/chopped
-3 Tbsp. Extra Light Olive Oil (Regular Olive Oil is okay but has a stronger taste)
-3 Tbsp. Olive Oil & Balsamic Vinaigrette
-2 Tbsp. Garlic, chopped (Store-bought pre-chopped garlic saves a bunch of time and energy without sacrificing taste)
-1 tsp. Dried Parsley
-1 tsp. Dried Basil
-1/2 tsp. Ground Black Pepper

Instructions:
1. Cook pasta according to package directions
2. Heat 2 Tbsp. olive oil in a large skillet on medium heat then add the onion, cook for 2-3 minutes (until onion is translucent), occasionally stirring.
3. Add the diced tomatoes (don't forget to rinse them!), cucumbers, basil, pepper, parsley, and 2 Tbsp. of the vinaigrette. Cook for 4 minutes, stirring occasionally.
4. Add the pasta to the skillet, stir in the remaining 1 Tbsp. olive oil and 1 Tbsp. vinaigrette and cover. Reduce to low heat and cover, stirring occasionally for 10 minutes. (This really brings out the vinaigrette & olive oil flavor).
5. Remove from heat and enjoy! Put the remainders in the fridge for later, it tastes great hot or cold!
